Slightly richer than traditional Txakoli, this wine’s lees are gently stirred periodically during the aging process in stainless steel vats.  Bottled with the typical spritz left in the wine, it combines the zesty, freshness we expect from the area with a bit more unctuous texture showing notes of lichee and summer stone fruit, the yellow straw-colored wine has a perfect balance of high-toned acid and creamy, melon fruit.

“Produced from 100% Honarribi Zuri grapes, this is from the most prized vineyard in the estate.  All terraced, south-facing vineyards planted high on the hillsides overlooking the famed Camino de Santiago de Campostela, from which the vineyard takes its name.”

Located in the charming fishing village of Zarautz, this family winery is one of the top small producers in the D.O. Getariako Txakolina. Bixente Eizaguirre, founder of the winery in 1992, is a fourth generation winemaker and his daughters, who now are very active in winery operations are the fifth. He was very active in the original initiative that resulted in the D.O. being established in 1989, and his winery was the first built exclusively for producing Txakoli wines.

The winery is equipped with temperature controlled, stainless steel vats, pneumatic press, and their own lab for monitoring the evolution of the wines.

Vineyards are from older holdings planted on the lower slopes facing the sea as well as more modern plantings facing south using modern trellis systems. The grape varietals are Hondarribi Zuri (white) and Hondarribi Beltza (red), which are indigenous to the area.

Production at the winery has been limited from the start by both the size of the building and the philosophy of the family. Their intent is to produce no more than 12,000 cases of wine so that there can be no compromise in the quality of the wines. Given their vineyard holdings, the production has now reached about 80% of capacity.
