Poema, Pura Organic, Cava, Brut, NV, Spain

Poema Pura is a collection of the traditional Penedès grape varieties. The Xarel·lo gives it body and structure; the Macabeu finesse and freshness; and the Parellada, elegance. The vines are grown following the organic wine-growing guidelines established by the Catalan Council of the Organic Production (CCPAE). Noteworthy among these methods are the use of organic fertilizers, pest control and plant nutrition to ward off disease, controlling plant yield to ensure quality grapes; and green roofs.
