This bottling is 100% Rondinella. The grapes hail from the Municipality of Mezzane di Sotto. The vines range in age between 10-15 years old and Guyot and Pergola trained, and are planted at 200-300 meters about sea level. They grow upon beds of sandy, silty with white skeletal limestone. Upon harvest and collection the grapes undergo a brief cold maceration followed by natural draining. Non-malolactic, controlled fermentation occurs at 12-13°C in stainless steel. The wine receives weekly bâtonnage and cold stabilization, before then aging in stainless steel.
