Angeline, the 3rd generation of Maison Lassalle, which recently celebrated the 80th anniversary of a family legacy, has decided to produce the “Cuvée Angeline” aged in wood as a rosé version. Angeline, the one who proudly carries the continuity and values of the Lassalle family, a woman of character, sparkling and intuitive, has made this new cuvée a standout! Wood, a noble and natural material from “a famous Rhône Sud appellation” which, moreover, leaves traces on the wine with its marked aromas … Wine of character, with pinot noir, comes from the terroir of Chigny les Roses and produced thanks to two plots “les Houssets”, Pinot Noir, 1972, and “les Pécherines” Chardonnay, 1973. Typical blend: 60% Pinot Noir 40% Chardonnay The typicality of their soil provides freshness in the mouth and a note of minerality that the chalk brings us. The first nose evokes liquorice, the signature of Pinot Noir, then red fruits (strawberry, cherry) appear subtly in a soft and sensual texture.
From the 2015 harvest, year … This champagne will be ideal to accompany poultry in sauce or foie gras.
Vinification: -manual harvesting – maturing and vinification exclusively in wood for 6 months – bottling at the estate in April – aging in bottles on the lees for 7 years – disgorging 4 months before shipment – dosage between about 7gr/l
